Gazpacho Tomato Soup

Ingredients

  • 3 medium ripe tomatoes
  • 1/2 cucumber
  • 1 green pepper
  • 1 medium onion
  • 1 medium garlic clove, minced
  • 4 tbsp olive oil
  • 1 tbsp white wine vinegar
  • 1 tbsp tarragon
  • Salt and pepper to taste

Directions

  1. In a food blender, add all the ingredients and spices and purée them until smooth.
  2. Garnish with tomato and pepper cubes.
  3. Serve cold.
