Ingredients
- 3 medium ripe tomatoes
- 1/2 cucumber
- 1 green pepper
- 1 medium onion
- 1 medium garlic clove, minced
- 4 tbsp olive oil
- 1 tbsp white wine vinegar
- 1 tbsp tarragon
- Salt and pepper to taste
Directions
- In a food blender, add all the ingredients and spices and purée them until smooth.
- Garnish with tomato and pepper cubes.
- Serve cold.
