Bottarga Deviled Eggs

Ingredients

  • 4 eggs
  • 3 tbsp bottarga dip, see here
  • 1 tbsp lemon juice
  • 1 tsp white vinegar
  • 3 chives, finely chopped
  • Salt and pepper to taste

Directions

  1. Hard boil the eggs.
  2. Cut in half and place the egg yolks in a bowl.
  3. Mass the yolks with a fork.
  4. Add the mayo, lemon juice, vinegar, bottarga dip, salt and pepper and mix to combine well.
  5. Spoon the mixture into a pastry bag and fill the egg halves.
