Baby spinach, green apple and warm goat cheese salad

Ingredients

for the salad

  •  90gr. baby spinach
  • 2  finochio (fennel) stalks
  • ½ green apple
  • one thick slice round goat cheese.

 

for the sauce

  • 3tbsp olive oil
  • 1tbsp balsamic vinegar
  • 3tbsp orange juice
  • 1½tbsp honey
  • pistachio
  • salt and pepper.

Directions

  1. Cut the finochio into small pieces.
  2. Cut 4 thin slices of apple and the rest into small pieces.
  3. Mix the ingredients of the sauce together and stir well till combined.
  4. Heat up the goat cheese (a few seconds in the microwave) and place it in the centre.
  5. Apply the sauce.
