Valeriana and leek crisps salad

Ingredients

  • 1 leek
  • 60gr. valeriana
  • 1 spring onion
  • parmesan flakes
  • sunflower oil
  • 1tsp miso paste
  • 2tbsp olive oil
  • 1tbsp white truffle oil
  • 2tbsp lemon juice
  • 1tbsp water
  • 1tsp mustard
  • pepper

Preparation

  1. Cut the leek into 3 pieces and then cut them lengthwise into very thin strips.
  2. Heat up the sunflower oil in a deep pan and fry the leek. Toss frequently and remove from heat when they turn golden-brown. Let them dry on kitchen paper.
  3. In a big plate, add the valeriana in the centre and place the leek around it.
  4. Cut the onion into small pieces.
  5. Prepare the sauce by mixing the miso paste, water, olive oil, truffle oil, mustard, onion and pepper. Stir well to combine the ingredients.
  6. Add the sauce to the salad and garnish with the parmesan flakes.

  1. The photos are so beautiful. And who wouldn’t love a salad with those caramelized leeks? Yum.

    But I was also drawn to the use of valerian, which I remember from my days as a toxicology student. I’ve never seen it used in food, but I believe the root has the sedative properties for which the plant is known. Are all the greens in the center valerian?

    • Thank you! Yes all the greens in the centre are valerian. It has a delicate sweet taste and in this salad it can be substituted with baby spinach. You’re right, the plant is known for it’s use in medicine since the ancient years.

  2. True..True! BTW, I recently bhugot a Cap-M-Quick capsule filler 50 @a time. Yes, I had been loading them 1 @ a time for years, but I have loads of time. I use a wood dowl to press the powdered Valerian in and make them as tightly packed as I can. The reason for this is the capsule ALWAYS gets stuck in my throat I felt it was from´╗┐ having too much air inside. This cured the problem somewhat, but some still get stuck. My family doesn’t have this problem. Any ideas?

  3. Manufacturers of herbs are suppose to put only the stuff that the cpaeulss say. Best Brand? really it’s just a matter of paying what you’re comfortable with. Now one can purchase the tinture if you’re willing to consume alcohol.I use the NOW products.
